My Secret Hummus Recipe'

As I mentioned in my book, hummus - not falafel-is the Israel national food ( pronounced Hum-mus). I did not like the canned variety I was served in the USA so never developed a taste for it before I was in Israel. However, once I had fresh hummus served in "hummusiya's bars" served warm and made with fresh chick peas - not from a can, it was delicious. I would compare that to eating a food made with dried figs to that of a fresh fig - not the same thing. So when I developed my own hummus recipe back in the USA, not to many  people even cared or could tell the difference. Yet, in Israel, hummus is a national food loved by most and many Israelis actually go from hummusiya to hummusiya tasting the different hummus as if it were a gourmet dish. So the video below is my hummus recipe revealed to the world.

My Secret Delicious Hummus Recipe' ( heart healthy)
Ingredients:
1) dried chick peas
2) onion
3) garlic cloves
4) olive oil
5) thyme
6) fresh ginger
7) salt
8) pita
9) Israeli olives
10) sweet paprika
11) lemon
12) water
13) cumin
14) coriander
15) Can Tahini (sesame seed paste)
16) parsley.
Let chick peas soak for half day. Put in large pan with boiling water just covering chick peas. Bring water to boil first. Add garlic cloves to taste, onion, thyme, pinch salt, pinch red paprika , knob ginger, a few branches of fresh thyme, pinch cumin, pinch coriander. Cook till chick peas are soft, about a half hour. Lower temperature and let simmer. Remove with strainer the onion, thyme, ginger. Leave garlic cloves in.

Put some dry roasted nuts in blender. Blend separately and remove. Put the hummus in blender with some of the cooked broth so it can blend. Blend to consistency you like, smooth or chunky. Add to plate and mix in dry roasted nuts, tahini, . Put olive oil and tahini on top and garnish with parsley and paprika. Have Israeli olives on side. Add some lemon to taste. Sprinkle paprika and olive oil on sliced open pitas and toast open in oven. You may also add the coriander and cumin to the top to taste. Eat the hummus with the pita and enjoy.
